Yesterday night was a wine night!!!
We have tasted many wines, but for the beginning, one of my favourite champagne, a Selosse one, The Initial Cuvée.
You have to know that only 33'000 bottles of this champagne were produced.
The colour is an intense yellow, golden yellow.
The bubble is very thin, not so persistant after aeration but really nice!
The nose reveals spicy notes, and also flavours of nuts, yellow fruits. It is very complex, like a great white wine from burgundy.
The palate is very fresh, very long and with lots of flavours (yellow fruits, walnuts, hazelnuts...). It is very complex, for me it's more a wine than a champagne.
It's better to taste this champagne after aeration. The flavours are more expressed.
I love it. It is delicious.
A great moment with this wine for the aperitive, but I think it will be even better during a dinner...
Here an article on Anselme Selosse, the winemaker of the domain.
